Bel Group is developing a digital twin of cheese with Dassault Systèmes to predict taste, texture and nutrition from recipe and process inputs, using The Laughing Cow as its pilot. The company tests about 3,000 recipes a year and is targeting operational use in 2028, with physical and sensory validation still central.
